Ingredients

100g(200ml) soft-wheat flour, 150ml water, 100-200g Japanese Yam, one egg, 300g cabbage, sliced pork, dried shrimp, bonito powder, Japanese Worcestershire sauce, bonito flakes, dried seaweed, mayonnaise
How to make
- Chop cabbage coarsely.
- Put flour and water into a bowl and mix them with a whisk.
- Put grated Japanese Yam into the bowl and mix with a ladle.
- Put cabbage, egg, dried shrimp, bonito powder into the bowl, and mix them lightly with a ladle.
- Put an electric griddle on high heat and apply oil to it.
- Pour the batter of Okonomiyaki into the griddle with ladle and spread it into a round shape. (like a pancake)
- Grill it on medium heat. Then, put the sliced pork on the surface.
- When browned, turn over. And when the sliced pork turns crispy, flip it again. Grill both side on medium heat until it gets golden brown.
- Serve Okonomiyaki on the plate and put some Japanese Worcestershire sauce on it. You can add some mayonnaise, bonito flakes and dried seaweed to dress it up.
Ideas for replacement of ingredients
・Japanese Yam→zucchini
・dried seaweed→dried parsley
・dried shrimp→if you can get shrimp cracker, crush it.
・bonito powder, bonito flakes→sorry, I couldn’t find a good substitute. Please get them at a supermarket in Japan.
・Japanese Worcestershire sauce→ Worcestershire sauce + ketchup + sugar + small amount of lemon juice
